Banana and nut loaf ingredients

Directions

Makes 1 loaf. Preheat the oven to 170°C. Grease a large loaf tin.

  1. Bring the sultanas and fruit juice to a boil in a small saucepan, then immediately remove from heat. Leave to soak while you prepare the rest.
  2. Whisk together the flours, baking powder, bicarb, and salt in a large bowl. Set aside.
  3. Mash the bananas in a bowl and mix in the yoghurt and vanilla. In a separate bowl, whisk the sugar, honey, and eggs with an electric whisk for about 5 minutes until lightened and thickened. Stir in the banana mixture.
  4. Fold in the dry ingredients, soaked sultanas, and three-quarters of the nuts, roughly chopped.
  5. Scrape into the prepared tin and scatter the remaining nuts over the top. Bake for about 60 minutes until a skewer comes out clean.
  6. Warm the extra honey and brush over the loaf while still warm. Cool in the tin.
  7. Wrap in greaseproof paper and store in an airtight container — keeps for about a week.
