Quick + Easy Biscotti

Ingredient List

  • 150g sugar
  • 2 eggs
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tsp vanilla
  • 3 drops orange blossom water
  • 3 drops rose water
  • 180g flour
  • Pinch of salt
  • 1 tsp dry yeast
  • 50g almonds, crushed (skin on or off)

Directions

  1. Preheat the oven to 180°C.
  2. Beat the eggs and sugar together thoroughly.
  3. Combine the orange zest, lemon zest, vanilla, orange blossom water, and rose water in a small bowl, then add to the egg mixture.
  4. Whisk the dry ingredients together in a separate bowl, then fold into the wet mixture. Mix well.
  5. Turn the dough out onto a floured surface and divide into two equal portions. Shape each into a log roughly 2cm thick and 8cm wide.
  6. Brush with egg wash, sprinkle with sugar, and bake for 20 minutes.
  7. Remove from the oven and slice into biscotti-width pieces. Return to the oven for 4 minutes, flip, and bake for another 4 minutes until dry and golden.
  8. Serve with good coffee.
