Quick + Easy Biscotti
Ingredient List
- 150g sugar
- 2 eggs
- Zest of 1 orange
- Zest of 1 lemon
- 2 tsp vanilla
- 3 drops orange blossom water
- 3 drops rose water
- 180g flour
- Pinch of salt
- 1 tsp dry yeast
- 50g almonds, crushed (skin on or off)
Directions
- Preheat the oven to 180°C.
- Beat the eggs and sugar together thoroughly.
- Combine the orange zest, lemon zest, vanilla, orange blossom water, and rose water in a small bowl, then add to the egg mixture.
- Whisk the dry ingredients together in a separate bowl, then fold into the wet mixture. Mix well.
- Turn the dough out onto a floured surface and divide into two equal portions. Shape each into a log roughly 2cm thick and 8cm wide.
- Brush with egg wash, sprinkle with sugar, and bake for 20 minutes.
- Remove from the oven and slice into biscotti-width pieces. Return to the oven for 4 minutes, flip, and bake for another 4 minutes until dry and golden.
- Serve with good coffee.
