Buttermilk Scones

Ingredients

  • 450g self-raising flour
  • ½ tsp salt
  • ¼ cup (50g) caster sugar
  • 100g butter
  • 1 cup (250ml) buttermilk or Amasi
  • ½ cup (125ml) milk

Use a 6cm (2.5 inch) cookie cutter and roll the dough to about 2cm thick.

Directions

Preheat the oven to 200°C (fan). Mix all the ingredients together until just combined — don't overwork the dough. Roll out to 2cm thick and cut into 10 rounds with a 6cm cutter.

Bake for 10–12 minutes until golden. Serve fresh with clotted cream, jam, and a pot of Earl Grey.
