Ingredients

  • 75ml water
  • 500ml caster sugar
  • 60g butter
  • 25ml syrup
  • 1 tin condensed milk
  • 5ml vanilla essence

Directions

  1. Over medium heat, stir the water and caster sugar together until dissolved.
  2. Add the butter and syrup and stir until fully combined.
  3. Stir in the condensed milk.
  4. Boil, stirring continuously, until the mixture turns a deep caramel colour and starts to thicken.
  5. Remove from heat and whisk in the vanilla essence.
  6. Pour into a lightly greased heatproof dish and score into portions while still warm.
  7. Leave to cool completely before cutting.
