Ingredient List

Ground Beef

  • 500g lean ground beef
  • 2 shallots, chopped
  • 4 garlic cloves, minced
  • Olive oil
  • 125ml dry red wine

Napolitana Sauce

  • 2 shallots, chopped
  • 2 garlic cloves, crushed
  • 600g fresh rosa tomatoes
  • 1 tsp salt
  • 1 tsp dried oregano
  • Fresh thyme
  • ¼–½ tsp black pepper
  • Fresh basil
  • ¼ cup heavy cream (optional, added later)

Homemade Spaghetti

  • 1 cup all-purpose flour
  • 1 egg, beaten
  • ½ tsp salt
  • 2 tbsp water

To Serve

  • Lots of parmesan

Directions

Ground Beef

Sauté the shallots and garlic in olive oil until soft. Add the ground beef and season to taste. Pour in the red wine and simmer gently until cooked through.

Napolitana Sauce

Cook the shallots and garlic in olive oil, then add the rosa tomatoes. Season with salt, oregano, and thyme and simmer until the sauce thickens. Finish with fresh basil and adjust seasoning. Stir in cream if using.

Spaghetti

Combine the flour and salt in a bowl, make a well in the centre, and add the beaten egg. Mix to form a stiff dough, adding water a tablespoon at a time if needed. Knead on a lightly floured surface for 5 minutes, then roll out to your desired thickness and cut into strips. Toss with a little flour to prevent sticking. Dry for later or boil straight away in generously salted water for 1–3 minutes.
