Homemade whole-wheat Fettuccine
Ingredient List
- 1 cup whole wheat flour
- 1 cup all-purpose flour, plus extra for dusting
- 2 large eggs
- 2 tbsp olive oil
- 1 tsp salt
Directions
Combine the flours, eggs, olive oil, and salt. Mix using a food processor with a dough hook, a stand mixer, or knead by hand until a smooth ball forms.
Working in batches of 4–6, roll the dough out into sheets, starting at the thickest setting and working down to your desired thickness and shape. Dust lightly with flour as you go to prevent sticking. Arrange each batch into nests.
To cook, bring a large pot of generously salted water to a boil and cook the pasta for 1–3 minutes.
Notes
- If the dough is too dry, add another egg.
- If too wet, add flour one tablespoon at a time.
- To freeze, shape into a ball, dust with flour, and wrap well.
