Marinated Artichokes
Ingredients
- 4 artichoke heads, cleaned and choke removed
- Salt and pepper
- Fresh garlic
- Fresh rosemary
- 2 lemons
- Dried oregano
- Olive oil
Directions
Steam the artichokes with lemon, rosemary, and salt until just tender.
Transfer to a roasting dish and grill at 180°C for 30 minutes with fresh garlic, fresh rosemary, dried oregano, the juice of two lemons (add the spent lemon halves to the dish too), and a generous drizzle of olive oil.
Serve immediately, or pack into a glass jar, cover with olive oil, and refrigerate. Perfect tossed through pasta or served as an antipasti with cheese.
