Greek Lamb

and organic garden herbs

 
 

Ingredient list

  • 2kg deboned lamb shoulder

  • 5 crushed garlic cloves

  • 1 chopped red onion

  • 2 lemons

  • 3 rosemary twigs

  • 1T of our Moroccan Spice.

  • 1t black pepper

  • ½t salt

  • ½c dry red wine

  • 2 cans of tinned tomato

  • 2c water (or more)

Directions

Turn your oven to 200°C, grill fan based.

Prepare all the ingredients as mentioned above, chop your onions, crush your garlic, measure out the spices.

Place all the ingredients, excluding the lemons and water in your favourite oven safe dish.

Make sure to add enough water to the oven dish, you can add more than 2c. Squeeze your lemon juice over all the ingredients and place the squeezed lemons on top of the lamb.

Place in the oven for 90-120min. After this time, check on your meat and if needed lower the oven temp. to 180ºC + normal heating until the lamb is super soft.

Remove from the oven and serve with organic garden herbs dressed in a vinaigrette.
